Ranga Aloor Pithe
I was on the phone with my mom-in-law the other day and heard about Ranga Aloor Pithe available at a fair in Kolkata. I asked her what is it and learned that it is very tasty, after all why will it not be tasty as it is a fried item that too dipped in sugar syrup. While talking she gave me a hint of how it is made and later that day I thought of giving it a try...
Ingredients: (Ranga Aloor Pithe)
- 1 medium sized Sweet Potato
- 2 tbsp Moong Dal
- Rice Flour
- Elaichi Powder
- Sugar
- Grated Coconut & Jaggery for the filing
- Oil to deep fry
To start, first roast the moong dal and then boil the dal and the sweet potato. Then mash them up adding a pinch of salt and elaichi powder, I used my hand as I like that way, you can use a potato masher. Now this is the difficult part, as sweet potato is very sticky you have to add rice flour slowly so that you can form a dough. Once you can form into balls, put some previously made coconut filling and shape them up as pithe.

For the sugar syrup, mix equal amounts of sugar and water and let it boil. The syrup should be less viscous, add 1 or 2 cardamom to flavor the syrup.
In the meanwhile start heating some oil to deep fry the Pithe. Fry them till you get the color.
Put the fried Ranga Aloor Pithe in the sugar syrup and let it stand for sometime. You can serve them hot or cold.
